RÉSONANCES is a series of Résidences Gastronomiques, gastronomic residencies: professionals invited to inhabit a place, bring their crafts into dialogue, and shape a ritual that exists nowhere else.
For its first edition, the project takes place at Maison Careï, on the Côte d'Azur, on 15 September 2026, where the journey extends beyond the table, becoming a language for exploring the bonds between matter, gesture, landscape, and people.
A dinner orchestrated in several sequences makes up the residency alongside Diego Quintero, resident coffee artisan and Colombian roaster, and Laura Colagreco, in charge of the residency's artistic direction and its fermented beverages. Ten guests, an evening conceived as a ritual rather than an event.
Throughout the evening: the welcome opens with a selection of live ferments curated by Laura Colagreco; a guided meditation through a soundscape; the discovery of a selection of gastronomic coffees from the private reserve of Diego Quintero, our resident coffee artisan; then a dinner orchestrated in several sequences.
